Our Creamy Cheese is made in a similar way to our Monterey Jack cheeses, with the key difference being the type of culture used.  We use an additional probiotic culture in this process, which has a unique effect on this special cheese!  In the end, we get a creamy, delicious cheese bearing the health benefits of yogurt.  Made with farm fresh milk, naturally probiotic, and essentially lactose free, our creamy cheese is winning on many fronts!

When making our Creamy cheese, we use a probiotic culture in addition to a traditional cheese culture. This makes our Creamy cheese naturally probiotic and essentially lactose-free (99.99%), a healthier cheese option for our more health-minded cheese lovers! This delicious creamy cheese has all the same benefits of eating yogurt. Many people have said it tastes similar to Havarti in flavor.

What is Lactose? What is Lactose Intolerance?
Lactose is a natural sugar that can be found in milk and other dairy products. This sugar molecule, lactose, is made up of two smaller sugar molecules, glucose and galactose. In order for lactose to be absorbed from the intestine and into the body, a specific enzyme called lactase must split these sugar molecules. Some people experience digestive discomfort when they lack this specific enzyme called lactase. This condition is known as “Lactose Intolerance,” and can make it difficult to enjoy dairy products including many cheeses. Our Creamy Cheese, however, is essentially “lactose free.” This is due to the probiotic culture (probiotic acidophilus and bifidium cultures) we used to make this cheese. The addition of cheese culture, one of the first steps in the cheese making process, activates the milk and turns the milk sugars into lactic acid. This probiotic culture metabolizes the lactose sugar when it grows and multiplies. As a result, our Creamy Cheese is lactose free by definition.

Shipping and Return

All cheese orders are shipped quickly and packed with insulated pouches and ice packs to keep them cold during transit. It is normal for the ice packs to melt, and cheese may arrive at room temperature. The cheese is sealed airtight and safe to eat. Please refrigerate upon arrival.

Cheese Making Process

At September Farm, cheesemaking begins with fresh whole milk from local dairies, carefully pasteurized to preserve its natural quality. Once warmed to ninety degrees, cheese culture is added to develop flavor and rennet is introduced to set the milk into a custard-like curd. The curds are cut into delicate cubes, gently cooked, and salted to balance flavor and act as a natural preservative. At this stage, we may add special seasonings—like those in our national award-winning Chives and Dill Jack—before pressing the curds into hoops and moving them into aging. Depending on the style, the result is either the rich sharpness of Cheddar or the smooth, creamy character of Monterey Jack, with every block hand-packed, cut, and cared for using time-honored methods.

This is a very special cheddar cheese made using a yogurt culture for a creamy finish and the added benefit of being lactose free!

Aged 3-6 months, this firm cheddar offers a creamy, mild flavor with a smooth texture, and melts beautifully for versatile recipes.

Microbial rennet

A natural enzyme microbial rennet is used to coagulate the milk.

Pasteurized Milk

We make our cheese with fresh pasteurized whole milk from local cows.

Salt

We add pure salt to bring out the natural flavor and preserve the cheese.
